Trays off longer, or back on without cleaning?

Twenty-two hours/day is my goal, but I've been in business situations where it was not possible to remove trays, eat, brush, insert trays, then remove again for food. Is it better to leave trays off for 4-5 hours straight or put them back on without being able to rinse or brush?
