I think it has more to do with the tech and the technique the tech uses. I’ve had a different tech each time I went in, and while I’ve been lucky with my adjustments in that none of them hurt when they slide the gates opened, some were definitely more uncomfortable than others.

I developed an open bite about 4 months into braces. My ortho put me in a night time elastic box configuration. Had it for 3 months and it fixed my open bite beautifully.

I've had elastics since day 1. Elastics use varies on the treatment and what needs to be done. Elastics are a pain but wear them as prescribed and you may shave time off your treatment! Take them out till when you eat.

The food thing is very likely psychological.

They move your teeth and improve your bite in ways that brackets and wires can't do alone. If you want the specifies, you'll have to ask your orthodontist about how your specific configurations work!
