Same way as composite is typically removed in other situations, using a burr on a drill.

Brackets can break off, but what can more easily happen is the wire can get bent and also pulled out of the molar tubes.

Movement was slow so my ortho said I could double them up and it worked. At first it felt like a lot of force and he said I might find it too uncomfortable but I got used to it.

You say you went to the dentist to straighten the teeth and fix protrusion. Never saw this as a big issue. You can go to the washroom after the meal to check your braces. You can also carry a travel toothbrush.

Presumably you're not chewing down on hard foods. A couple of things that can affect bracket adhesion include prep of the enamel prior to gluing them on and also the stiffness of the current wire (if the teeth aren't that straight yet and the wire is deformed the force on the brackets can be elevate...

It's glue. When your brackets are removed the glue will be removed, typically using a burr on a drill.
