As I mentioned in another post, these were a necessity for me, especially after eating pork which tends to get stuck under your braces.

I found the interdental toothbrushes (the little ones that look a little like a pipecleaner) a necessity, especially after eating pork.

You're making great progress. I'm also middle-aged with a small jaw and had a lower front tooth removed. Interesting that they did it a few weeks after you were braced. I had mine removed prior to bracing.

My ortho instructed me to soak them in vinegar/water once a week for about an hour.

Yes, they move quickly. I was fitted for my retainer before my braces were removed. I now wear the retainers two nights a week. They feel a little tight when they first go on which means that my teeth have shifted.

My ortho did some finishing touches by bending the wires a few weeks before I had my braces off.

I went after three months, six months and a year, then he said to call him if I had any problems or need to get a new retainer.

You're very lucky. I had the same problem but they removed one of my front teeth then closed the gap with braces. I've got a very small mouth. More than likely your crowding would have gotten progressively worse as you got older so it's great that you're getting it taken care of.
